I want a novel like breath of creation where the mc creates a world/universe and we get to see him maintain or watch over it

Will be difficult to find here. It's easier to find that kind of MC in eastern novels.

It's a side plot, but A Lonely Exploration of Tao. 

How I wish I could find stories like this.... I've been looking for a new one for years (and one that doesn't fall into hiatus or have the defects of a Chinese novel). In the meantime, here are the ones I found (which you've already seen if like me you've been looking for this kind of novel for a long time):

Excluding breath of creation the rr ones are pretty bad I've read all the Chinese ones except the ultimate fantasy I checked it out it didn't seem good and unfortunately I dont know any other novel like this

It's not overt in the telling of the tale, but Creation is the premise of my series of Light Novels called DOTS. ❤

Dao of Magic here on RR has that as the story progresses, but it takes until about 1/3 (?) of the way into the story before the world is created.
