So, your fiction can be manually put on hiatus in the 'settings' then 'change status' page of author dashboard.
Also, chapters cannot be fully deleted, when deleted, they are basically made private. What this means is that if you don't want a chapter to be seen while you edit it, you can delete it, edit it, then undelete it. 
Instead of deleting the story, you can always just delete all the chapters.
Also, you can call your story a 'stub' or 'dropped' or whatever VIA the 'change status' page, which is good enough.
