Might or might not just be me, but...
#1
There's a feeling in me that says I have to rush to get my chapters out frequently in the same week. I would save up chapters and release them one day after the other, but it took longer to do that than to just make one chapter and release it after editing it. Honestly, I want to take my time, but I can be slow at times, so I'm kind of conflicted. I don't want to say I'm the only one who gets this feeling since that would be wrong, so who else does?

A delayed chapter can still be good, but a rushed chapter can never be good.

Reduce the amount of releases to achieve high quality chapters with reduced stress burden. Leave at least one chapter buffer so that you can compensate for lazy days.

Slow but consistent updates are far wiser than updates that happen quickly but are not maintainable.
The problem with rushing is it only works when you're in a 100 meter sprint, not a marathon. It's best to take your time, work at your own pace, and keep everything manageable.

To itch to release something as soon as it's written can be quite strong. However, it's best to release at a rate you can comfortably maintain. I think consistency is more important than rate to many readers.

I'm not sure if this will help, but what I did is take a week off of work and spend every single day writing 1 or 2 chapters a day. That built a decent buffer so that I could better keep up with my schedule.

I knew this was going to happen to me. So im not posting until I at least write for three months straight. I want at least a month or two buffer because there are some days where you just don't feel like writing, you know?
But with your current issue, you either have to slow down your rate of posting or go on a short hiatus and build a backlog. As you have already posted, those are your two options. I suppose there is a third option where you could spend the full day writing.
Do you have your story loosely plotted? I find that zero motivation comes when I'm stuck at a particular scene.

If you take a weeks worth of writing and editing, see how much that is on average … then write ahead as much as you can before you post. I post 3 chapters a week because that’s manageable, but I write seven a week because I want to finish this manuscript damn it!
